Cottage food.

Graham and I are heading up to Rice Lake for a week, and yesterday we went grocery shopping to stock up on food for our little holiday.  Again, this week I didn’t have time to sit down and plan our meals before going to the grocery store, but I still managed to put together some decent meals for our week at the cottage:  I knew we needed dinner for seven nights, snacks, breakfast food and lunch.

For breakfast, we’ll be taking hashbrowns, eggs, breakfast sausages and chicken bacon.  We have a fantastic grill that can be placed directly on the barbecue, and we cook our bacon and eggs out on the deck of the cottage, overlooking the lake.  We also have whole wheat bagels and fruit for our mornings.  And don’t forget the coffee!

For lunches, we have cold cuts, hamburgers and hot dogs, the staples of cottage living.  We got whole wheat buns, in an effort to eat something nutritious!

And for dinner:

  • Pita pizzas, which we’ll grill on the barbecue.  Fresh mushrooms, peppers, onions and herbs will be the toppings.
  • Frozen lasagna.  Hey, I’m on vacation!
  • Chicken thighs, to be tossed with Shake ‘n Bake, served with some asparagus and side rice.
  • Chicken breasts, to be tossed with some peppers and onions on the grill, served with broccoli and noodles.
  • Ciabatta pressed sandwiches.  Pesto and provolone with salami and red peppers.  A giant sandwich we can share for a few meals!
  • Honey garlic sausages on a bun.
  • There is usually a fish fry one night while we’re at the cottage, provided by the owners.  Fresh pickerel, sunfish, catfish, bass…tasty little morsels they serve with a salad.

For snacks we have more than enough chips & dip and low-fat frozen yogourt.  As I mentioned to Graham at the checkout at the grocery store yesterday, I think we have an even balance of junk and healthy food.  Hey, we’re on vacation!  I’ll try not to gain more than oh, say, 5 pounds this week…
