When it's too hot outside to cook.

We seem to have skipped right over late spring and have been thrust headlong into record-high, scathing summer temperatures here in Southern Ontario. I spent part of yesterday in the City of Toronto, and although I was near the lake, able to enjoy the breeze as it crossed the lake shore and penetrated the city, I still felt beads of sweat trickling down my back as I walked to my car.

As part of this week’s Menu Plan, I had originally planned to cook stew for dinner yesterday. However, when the weather is hot like this, stew is naturally out of the question. I pulled some hot Italian and chirozo sausages out of the freezer, tossed ‘em on the barbecue and set to work putting together this little al fresco dinner for Graham and myself to enjoy on our back deck.

All of these items were available in our refrigerator, so I simply raided its shelves, did a little slicing, and arranged the fruits and vegetables prettily on the plate. Never one to miss up an opportunity for a little bit of fanciness or a hint of festivity, I added some herb garnishes from the garden.

Too hot too cook!

The next time it’s just too hot to be cooking in your kitchen, take a peek inside your refrigerator and see what’s hiding in there. Slice up vegetables, cut some cheese into cubes, add a dollop of hummus or red pepper dip, and you’ll have yourself a filling and rather healthy supper in no time! Cold cuts like salami or prosciutto would also be a lovely addition. For those who can’t do without bread of some kind, serve with mini-pitas, crackers, or multi-grain tortillas.  And of course, don’t forget to serve with a refreshing cocktail or chilled beer.
